Omelet

I made an amazing breakfast this morning.

3 organic eggs from my mother’s chickens; organic, local spinach from Agua Linda farms; organic mozzarella cheese; organic sour cream; green onion from my onion plants that are sitting on the counter.

I wonder if I could calculate the transportation cost of the green onion in micro-calories or micro-tonnes of CO2 emissions. It would consist of cutting it off the plant and turning around.

I really enjoy cooking breakfast.
